4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon lemon juice

Optional: paprika or red pepper flakes for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, and Italian herbs. Mix until well combined. Season with salt and pepper to taste.

      Prepare the Chicken: Place the chicken breasts on a chopping board. Using a sharp knife, carefully cut a pocket into each breast, making sure to leave the sides intact.

        Stuff the Chicken: Generously fill each chicken pocket with the cheesy spinach mixture. Secure the opening with toothpicks if necessary to prevent the filling from spilling out during cooking.

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts. Sear each side for about 3-4 minutes until golden brown.

            Bake the Chicken: Drizzle the lemon juice over the chicken. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

              Serve: Once cooked, remove the skillet from the oven. Let the chicken rest for 5 minutes before slicing. Garnish with optional paprika or red pepper flakes for an extra kick. Serve warm with your choice of sides, such as roasted vegetables or a fresh salad.
