Cheesy Spinach and Artichoke Chicken Bake

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken breasts with salt, pepper, onion powder, and garlic powder on both sides. In a large oven-safe skillet, heat olive oil over medium heat. Add the seasoned chicken and sear for 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Make the Spinach and Artichoke Mixture: In the same skillet, reduce the heat to low. Add minced garlic and cook for about 1 minute until fragrant. Then, stir in the chopped spinach and artichoke hearts. Cook for about 3-4 minutes until the spinach wilts.

        Combine with Cream Sauce: In a mixing bowl, combine softened cream cheese, sour cream, half of the mozzarella cheese, half of the Parmesan cheese, and red pepper flakes (if using). Mix well until smooth. Then, fold in the spinach and artichoke mixture until well combined.

          Assemble the Bake: Lay the chicken breasts back into the skillet or an oven-safe baking dish. Spoon the cheesy spinach and artichoke mixture evenly over each piece of chicken. Top with the remaining mozzarella and Parmesan cheeses.

            Bake: Place the skillet or baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the cheese is bubbling and golden.

              Garnish and Serve: Once baked, remove from the oven and allow it to cool for a few minutes. Garnish with chopped parsley before serving. Pair with a side salad, rice, or crusty bread.
