4 large russet potatoes, thinly sliced

2 cups heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 medium onion, finely chopped

3 cloves garlic, minced

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 teaspoon nutmeg (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Sauce: In a medium saucepan over medium heat, melt the butter. Add the chopped onion and garlic, sautéing until softened (about 3-4 minutes). Stir in the flour and cook for another minute until it forms a roux.

      Add Cream: Gradually whisk in the heavy cream, ensuring there are no lumps. Continue stirring until the mixture thickens slightly (about 5 minutes).

        Add Seasoning and Cheese: Lower the heat and add the shredded cheddar and Gruyère cheeses, salt, black pepper, smoked paprika, and nutmeg. Stir until the cheese has melted and the sauce is smooth. Remove from heat.

          Layer the Potatoes: In a greased 9x13 inch baking dish, place a layer of sliced potatoes on the bottom. Pour a portion of the cheese sauce over the top, spreading it evenly. Repeat this process, layering potatoes and sauce until all ingredients are used, finishing with the cheese sauce on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.

              Cool and Serve: Remove from the oven and allow to cool for about 10 minutes. Garnish with freshly chopped parsley before serving.
