4 large russet potatoes, thinly sliced

2 cups sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

1 medium onion, finely chopped

3 cups heavy cream

3 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.

    In a saucepan over medium heat, melt the butter. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

      Stir in the heavy cream, thyme, salt, black pepper, and nutmeg. Bring the mixture to a gentle simmer.

        Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cream mixture over the potatoes, and sprinkle with half of both cheeses (cheddar and Gruyère).

          Repeat the layering process with the remaining potatoes, cream mixture, and cheeses, ensuring the top layer has a generous amount of cheese.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

              After 45 minutes, remove the foil and bake for an additional 30 minutes or until the top is golden and bubbly. Check that the potatoes are tender by inserting a fork.

                Allow the cheesy scalloped potatoes to cool for 10 minutes before serving. Garnish with fresh parsley for a pop of color.
