2 lbs baby potatoes, halved

1 packet ranch seasoning mix (about 1 oz)

1 cup shredded cheddar cheese

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and black pepper to taste

1/4 cup chopped fresh chives (for garnish)

Optional: sour cream for serving

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: In a large bowl, combine the halved baby potatoes, olive oil, ranch seasoning mix, garlic powder, onion powder, paprika, salt, and black pepper. Toss well until the potatoes are evenly coated.

      Spread on Baking Sheet: Pour the seasoned potatoes onto the prepared baking sheet, spreading them out in a single layer to ensure even roasting.

        Roast Potatoes: Place the baking sheet in the preheated oven and roast for about 25 minutes, or until the potatoes are fork-tender and golden brown.

          Add Cheese: Remove the baking sheet from the oven, sprinkle the shredded cheddar cheese over the potatoes, and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
