4 large flour tortillas

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/2 cup diced bell peppers (red and green)

1/2 cup sliced black olives

1/2 cup finely chopped green onions

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil (for cooking)

Salsa and sour cream (for serving)

Instructions
 

Prepare the Cheese Mixture: In a medium bowl, combine the sharp cheddar cheese, mozzarella cheese, cream cheese, diced bell peppers, black olives, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until everything is evenly combined.

    Heat the Pan: Heat a large skillet over medium heat and add 1 tablespoon of olive oil, swirling it around to coat the pan evenly.

      Assemble the Quesadillas: Place one tortilla in the skillet. Spread a generous amount of the cheese mixture (about 1 cup) evenly over half of the tortilla. Fold the tortilla over to create a half-moon shape.

        Cook the Quesadilla: Cook for about 3-4 minutes or until the bottom is golden brown. Carefully flip the quesadilla using a spatula and add the remaining tablespoon of olive oil to the skillet if needed. Cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.

          Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the assembly and cooking process with the remaining tortillas and cheese mixture.

            Serve: Cut the quesadillas into wedges and serve warm with salsa and sour cream on the side for dipping.
