1 cup shredded mozzarella cheese

1/4 cup cream cheese, softened

1 large egg

1 1/2 cups almond flour

1 tsp baking powder

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp salt

1 cup sliced pepperoni

1/2 cup grated Parmesan cheese (for topping)

Marinara sauce (for dipping, optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Melt the Cheeses: In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave on high for about 1 minute, stir, then heat for an additional 30 seconds until melted and well combined.

      Mix Dry Ingredients: In a separate bowl, whisk together the almond flour, baking powder, garlic powder, Italian seasoning, and salt until evenly distributed.

        Combine Mixtures: Add the melted cheese mixture to the dry ingredients, followed by the egg. Mix until a dough forms. You may need to use your hands to knead it a bit.

          Incorporate Pepperoni: Fold in the sliced pepperoni until evenly distributed throughout the dough.

            Shape the Bites: Take small portions of the dough (about a tablespoon-sized) and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
