4 large flour tortillas

6 large eggs

1 cup shredded cheddar cheese

1 cup canned or roasted Hatch green chilies, chopped

1/2 cup diced onion

1/2 cup diced bell pepper (any color)

1/4 cup milk

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Salsa (for serving)

Instructions
 

Sauté Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper and sauté for about 3-4 minutes until they are softened and the onion becomes translucent.

    Prepare Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in the chopped Hatch chilies and half of the shredded cheese.

      Cook Eggs: Pour the egg mixture into the skillet with the sautéed vegetables. Cook the eggs on medium heat, gently stirring occasionally until they are just set and fluffy, about 5-7 minutes.

        Warm Tortillas: In a separate dry skillet, warm the flour tortillas over low heat for about 30 seconds on each side until they are pliable.

          Assemble Tacos: Divide the cheesy egg mixture evenly among the warmed tortillas. Sprinkle the remaining cheddar cheese on top of each taco.

            Melt Cheese: For extra cheesiness, you can place the assembled tacos in a clean skillet over low heat, cover with a lid, and let them cook for an additional 1-2 minutes to melt the cheese.

              Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve with salsa on the side.
