1 pound ground beef

1 medium onion, diced

3 cloves garlic, minced

4 medium-sized potatoes, thinly sliced

2 cups cheddar cheese, shredded (divided)

1 cup sour cream

1 cup cream of mushroom soup

1 cup beef broth

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.

      Add the ground beef to the skillet and cook, breaking it apart with a spatula, until browned and cooked through. Drain excess grease.

        In a large mixing bowl, combine the sour cream, cream of mushroom soup, beef broth, paprika, salt, and black pepper. Mix well to create a creamy sauce.

          In a greased 9x13 inch baking dish, layer half of the sliced potatoes evenly at the bottom. Then, layer half of the cooked ground beef mixture on top, followed by a third of the cheddar cheese.

            Pour half of the creamy sauce over the first layer, covering it evenly.

              Repeat the layers: the remaining sliced potatoes, the rest of the ground beef, another third of the cheddar cheese, and then the remaining creamy sauce.

                Top the casserole with the final third of the shredded cheddar cheese.

                  Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

                    Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.

                      Allow to cool for a few minutes before serving. Garnish with fresh parsley if desired.
