Cheesy Chicken & Spinach Enchiladas

For the Enchiladas:

2 cups cooked chicken, shredded

2 cups fresh spinach, chopped

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 cup sour cream

1 cup enchilada sauce (store-bought or homemade)

8 flour tortillas

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil for cooking

For the Toppings:

½ cup diced tomatoes

¼ cup sliced green onions

Additional shredded cheese (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large skillet over medium heat, add olive oil. Once heated, sauté the chopped spinach for about 2-3 minutes, until wilted. Remove from heat and let it cool slightly.

      Combine Ingredients: In a large mixing bowl, combine the shredded chicken, sautéed spinach, Monterey Jack cheese, half of the cheddar cheese, sour cream, cumin, garlic powder, salt, and pepper. Mix until well incorporated.

        Assemble the Enchiladas: Take a flour tortilla and place a generous amount of the chicken and spinach mixture in the center. Roll the tortilla tightly around the filling, and then place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.

          Prepare the Sauce: Pour the enchilada sauce evenly over the rolled enchiladas in the baking dish. Sprinkle the remaining cheddar cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

              Garnish: Once done, remove from the oven and let it cool for 5 minutes. Top with diced tomatoes, green onions, and cilantro if desired.

                Serve: Cut into portions and serve warm with extra sour cream or guacamole on the side.
