1 lb Brussels sprouts, trimmed and halved

1 cup sharp cheddar cheese, grated

½ cup cream cheese, softened

¼ cup milk

2 tbsp olive oil

3 cloves garlic, minced

½ tsp salt

½ tsp black pepper

½ tsp smoked paprika

¼ cup Parmesan cheese, grated

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the Brussels sprouts with olive oil, garlic, salt, pepper, and smoked paprika. Toss them until evenly coated.

      Spread the seasoned Brussels sprouts in a single layer on a baking sheet lined with parchment paper. Roast them in the preheated oven for about 20-25 minutes, or until they are tender and slightly crispy on the edges, tossing halfway through.

        While the Brussels sprouts are roasting, prepare the cheese sauce. In a medium saucepan over low heat, combine the cream cheese and milk. Stir until smooth and creamy.

          Gradually add the sharp cheddar cheese to the cream mixture, stirring continuously until melted and well combined. Remove from heat and set aside.

            Once the Brussels sprouts are done roasting, transfer them to a baking dish. Pour the cheesy sauce over the sprouts, making sure they are well coated. Sprinkle the Parmesan cheese on top.

              Return the baking dish to the oven and broil for an additional 3-5 minutes, or until the cheese is bubbly and golden brown. Keep a close eye to prevent burning.

                Remove from the oven, garnish with chopped parsley, and serve hot.
