2 cups cheese tortellini (fresh or frozen)

1 pound ground beef (or Italian sausage)

1 medium onion, diced

2 cloves garlic, minced

1 (28-ounce) can crushed tomatoes

1 (15-ounce) can tomato sauce

1 tablespoon tomato paste

2 teaspoons dried Italian herbs (basil, oregano, thyme)

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

      Prepare the Meat Sauce: In a large skillet over medium heat, add the ground beef (or sausage). Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat.

        Add Vegetables: Add the diced onion and minced garlic to the skillet with the meat. Cook for an additional 3-4 minutes until the onion is translucent.

          Combine Sauce Ingredients: Stir in the crushed tomatoes, tomato sauce, and tomato paste. Add dried herbs, red pepper flakes (if using), and season with salt and pepper. Bring to a simmer and let it cook for 10 minutes to blend flavors.

            Mix Tortellini and Sauce: In a large mixing bowl, combine the cooked tortellini with the meat sauce until well coated.

              Layer and Bake: In a greased 9x13-inch baking dish, pour half of the tortellini and sauce mixture. Sprinkle with 1 cup of mozzarella cheese and half of the Parmesan cheese. Pour the remaining tortellini mixture on top and finish with the remaining mozzarella and Parmesan cheeses.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for another 15 minutes or until the cheese is bubbly and golden.

                  Garnish and Serve: Once baked, let the dish sit for about 5 minutes. Garnish with fresh basil or parsley if desired. Serve hot and enjoy your cheesy, comforting baked tortellini!
