12 oz cheese tortellini (fresh or frozen)

1 lb sirloin steak, thinly sliced

2 tbsp olive oil

1 medium onion, thinly sliced

1 green bell pepper, thinly sliced

2 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1 cup provolone cheese, shredded

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions, then drain and set aside.

    Sauté the Steak: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the thinly sliced sirloin steak and season with salt and pepper. Sear the steak for about 4-5 minutes until browned. Remove the steak from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and green bell pepper, and sauté for about 5-7 minutes until they are tender. Stir in the minced garlic and cook for an additional minute.

        Create the Sauce: Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to medium-low, then add the heavy cream and stir well. Allow the sauce to simmer for about 3-4 minutes to thicken slightly.

          Combine Ingredients: Add the cooked steak back into the skillet along with the drained tortellini. Stir to combine everything thoroughly. Gradually add the shredded provolone cheese, mixing until melted and creamy.
