1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, drained

1 can (15 oz) kidney beans, drained and rinsed

1 cup frozen corn

2 cups cooked macaroni (elbow pasta)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk

2 eggs

1 tsp Worcestershire sauce

1 tsp dried oregano

1 tsp paprika

Salt and pepper, to taste

½ cup pickles, diced (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet, brown the ground beef over medium heat. Add in the diced onion and minced garlic, cooking until the onion is translucent (about 5 minutes). Drain excess grease if necessary.

      Combine Ingredients: In a large mixing bowl, combine the browned beef mixture, drained diced tomatoes, kidney beans, frozen corn, cooked macaroni, Worcestershire sauce, oregano, paprika, salt, and pepper. Mix well to incorporate all ingredients.

        Prepare the Filling: In a separate bowl, whisk together the milk and eggs until well blended. Pour this mixture over the pasta and beef mixture, stirring to combine. This will help bind the casserole.

          Cheese Layer: Fold in half of the shredded cheddar and mozzarella cheeses into the mixture. Reserve the other half for topping.

            Assemble Casserole: Transfer the mixture to a greased 9x13 inch (or similar sized) baking dish. Spread it evenly, and top with the remaining shredded cheeses.

              Bake: Cover the dish with foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
