Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup cold unsalted butter, cut into cubes

1 cup shredded sharp cheddar cheese

1/2 cup diced fresh jalapeños (seeds removed for less heat)

3/4 cup whole milk

1 large egg

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

Optional: Fresh cilantro for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and grease a muffin tin or place liners in the cups.

Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, garlic powder, and black pepper.

Cut in Butter: Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese and Jalapeños: Stir in the shredded cheddar cheese and diced jalapeños, ensuring they are evenly distributed throughout the flour mixture.

Combine Wet Ingredients: In a separate bowl, whisk together the milk and the egg until well combined.

Mix Wet and Dry Ingredients: Pour the milk and egg mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix.

Shape the Biscuit Mixture: Using a large spoon or your hands, scoop portions of the biscuit dough and gently press them into the greased muffin tins, forming small cups with the dough coming up the sides.

Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes or until the tops are golden brown and the biscuits are cooked through.

Cool and Serve: Once baked, remove from the oven and let the biscuit cups cool in the pan for about 5 minutes. Carefully transfer them to a wire rack. Optionally, garnish with fresh cilantro before serving.

Enjoy: Serve warm as a delightful breakfast treat or brunch option. Enjoy the cheesy, spicy goodness!
