Ingredients

1 cup rolled oats

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/4 cup maple syrup

1 large egg

1 teaspoon vanilla extract

1/2 cup raisins or chopped walnuts (optional)

1/4 cup chopped crystallized ginger (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, flour, baking soda, cinnamon, ginger, cardamom, nutmeg, cloves, and salt. Whisk them together until well mixed and set aside.

Cream Butter and Sugars: In another bowl, beat the softened butter, brown sugar, and granulated sugar using an electric mixer until the mixture is light and fluffy, about 2-3 minutes.

Add Bindings: Add the maple syrup, egg, and vanilla extract to the butter-sugar mixture. Continue to beat until fully incorporated.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in the raisins or walnuts and crystallized ginger.

Scoop Cookies: Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers look set.

Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve your delicious Chai Spiced Oatmeal Cookies warm or at room temperature with a cup of tea or coffee!
