Carrot Cake Bars

2 cups grated carrots (approximately 4 medium carrots)

1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup vegetable oil (or melted coconut oil)

3 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins (optional)

Cream cheese frosting (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a 9x13 inch baking pan with parchment paper for easy removal.

    Prepare the Carrots: Grate the carrots using a box grater or a food processor until you have about 2 cups.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, rolled oats, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

        Mix Wet Ingredients: In another bowl, beat the eggs with brown sugar, granulated sugar, and vegetable oil until the mixture is smooth. Stir in the vanilla extract.

          Combine Mixtures: Gradually add the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.

            Add Carrots and Extras: Fold in the grated carrots, crushed pineapple, nuts, and raisins (if using). The mixture should be thick and hearty.

              Bake: Spread the batter evenly into the prepared baking pan. Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                Cool: Once baked, remove from the oven and let the bars cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely before frosting.

                  Frosting: Once the bars are completely cooled, frost with your favorite cream cheese frosting.

                    Serve: Cut into squares or bars, serve, and enjoy!
