For the Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

16 oz (two 8 oz packages) cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

2 large eggs

1/2 cup sour cream

1/4 cup heavy cream

For the Caramel Swirl:

1/2 cup caramel sauce (store-bought or homemade)

Sea salt (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.

    Prepare the Crust:

      - In a medium bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until well combined.

        - Press about 1 tablespoon of the mixture into the bottom of each cupcake liner to form the crust. Bake for 8-10 minutes until set. Allow to cool slightly.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Add the powdered sugar and vanilla extract; mix well.

                - Beat in the eggs one at a time, mixing on low speed until just combined (do not overmix).

                  - Gently fold in the sour cream and heavy cream until smooth.

                    Add the Caramel Swirl:

                      - Scoop about 2 tablespoons of cheesecake filling into each crust.

                        - Drizzle a teaspoon of caramel sauce on top of the filling, then use a toothpick or skewer to swirl the caramel into the cheesecake gently.

                          - Repeat the process until all cups are filled, leaving a little space at the top.

                            Bake the Cheesecake Cups:

                              - Bake in the preheated oven for 15-20 minutes, or until the centers are set but slightly jiggly. Do not overbake.

                                - Turn off the oven, crack the door open, and let the cheesecake cups cool in the oven for about 30 minutes to prevent cracking.

                                  Chill:

                                    - Remove from the oven and let cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, or preferably overnight, to set properly.

                                      Serve:
