For the Pumpkin Filling:

1 (15 oz) can pureed pumpkin

1 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup heavy cream

3 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

For the Pecan Crust:

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup chopped pecans

1/2 cup unsalted butter, melted

1/3 cup brown sugar

1 teaspoon baking powder

1/4 teaspoon salt

For the Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter, cubed

1/2 cup heavy cream

1 teaspoon vanilla extract

A pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Pumpkin Filling: In a large mixing bowl, combine the pumpkin puree, brown sugar, granulated sugar, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk until smooth and set aside.

      Make the Pecan Crust: In another bowl, mix the flour, rolled oats, chopped pecans, melted butter, brown sugar, baking powder, and salt. Stir until all the ingredients are well combined and create a crumbly mixture.

        Layer the Dish: In a greased 9x13 inch baking dish, pour the pumpkin filling evenly across the bottom. Gently crumble the pecan mixture over the top, covering the pumpkin filling as evenly as possible.

          Bake the Cobbler: Place the baking dish in the preheated oven and bake for about 45-50 minutes, or until the filling is set and the crust is golden brown.

            Prepare the Caramel Sauce: While the cobbler is baking, prepare the caramel sauce. In a medium saucepan over medium heat, combine the granulated sugar and cook until it melts and turns a deep amber color, stirring occasionally (this will take about 5-7 minutes).

              Add Butter and Cream: Once the sugar is melted, carefully add the cubed butter and stir until melted. Gradually add the heavy cream, stirring continuously until smooth. Remove from heat and stir in the vanilla extract and a pinch of salt.

                Cool the Cobbler: Once the cobbler is done baking, allow it to cool slightly for about 10-15 minutes before serving.

                  Serve: Drizzle warm caramel sauce over individual portions of the cobbler and sprinkle with extra chopped pecans if desired. Enjoy warm with a scoop of vanilla ice cream!
