1 ½ cups chocolate graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Cheesecake Filling:

24 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

½ cup brewed coffee, cooled

½ cup cocoa powder

For the Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter, cubed

½ cup heavy cream

1 teaspoon sea salt (optional)

For Garnish:

Whipped cream

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a bowl, mix the chocolate graham cracker crumbs, melted butter, and sugar until well combined.

        - Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, combine the softened cream cheese, sugar, and vanilla. Beat until smooth.

              - Add the eggs one at a time, mixing well after each addition.

                - Mix in the sour cream, brewed coffee, and cocoa powder until smooth and well blended.

                  Bake the Cheesecake:

                    - Pour the cheesecake filling over the cooled crust and smooth the top.

                      - Place the pan in the oven and bake for 55-60 minutes, or until the center is set but slightly jiggly.
