For the Cheesecake Filling:

16 oz (450g) cream cheese, softened

1 cup (200g) granulated sugar

1 tsp vanilla extract

3 large eggs

1/2 cup (120ml) sour cream

1/4 cup (60ml) heavy cream

For the Apple Filling:

3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/4 cup (50g) granulated sugar

1 tsp cinnamon

1 tbsp lemon juice

1 tbsp cornstarch

For the Crisp Topping:

1 cup (100g) rolled oats

1/2 cup (65g) all-purpose flour

1/2 cup (100g) brown sugar, packed

1/2 tsp cinnamon

1/2 cup (1 stick, 113g) unsalted butter, melted

1/2 cup (120ml) caramel sauce (store-bought or homemade)

For Fresh Serving:

Additional caramel sauce for drizzling

Instructions
 

Prepare the Cheesecake Filling:

    - In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

      - Gradually add the granulated sugar and beat until well combined.

        - Mix in the vanilla extract, followed by the eggs, one at a time, until incorporated.

          - Finally, stir in the sour cream and heavy cream until the mixture is completely smooth. Set aside.

            Make the Apple Filling:

              - In another bowl, combine the diced apples, granulated sugar, cinnamon, lemon juice, and cornstarch. Toss until the apples are well coated and set aside to macerate for about 10 minutes.

                Prepare the Crisp Topping:

                  - In a medium bowl, mix the rolled oats, all-purpose flour, brown sugar, and cinnamon.

                    - Pour in the melted butter and stir until the mixture is crumbly. Set aside.

                      Assemble the Cheesecake:

                        - Preheat your oven to 325°F (160°C).

                          - Grease a 9-inch springform pan with non-stick cooking spray or butter.

                            - Pour half of the cheesecake filling into the prepared springform pan, smoothing evenly with a spatula.

                              - Spoon the apple filling over the cheesecake layer, spreading it evenly.

                                - Pour the remaining cheesecake mixture on top of the apples, smoothing it over gently.

                                  - Finally, sprinkle the crisp topping generously over the cheesecake layer.

                                    Bake:

                                      - Carefully place the springform pan into the preheated oven and bake for 60-70 minutes or until the center is set but still slightly jiggly (it will firm up as it cools).

                                        - Once baked, turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for one hour to prevent cracking.

                                          Chill:

                                            - After it cools, refrigerate the cheesecake for at least 4 hours, preferably overnight, until fully chilled and set.

                                              Serve:

                                                - Once chilled, carefully remove the sides of the springform pan. Drizzle additional caramel sauce over the top and slice into wedges.
