Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal later.

Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until well combined. Press this mixture firmly into the bottom of the prepared baking dish, creating an even layer. Bake for 10 minutes. Remove from the oven and set aside to cool.

Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese using an electric mixer until creamy and smooth. Gradually add the granulated sugar, and continue to beat until well combined.

Add the Eggs and Flavor: Add the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and cinnamon, mixing until smooth.

Prepare the Apples: In a separate bowl, toss the diced apples with ¼ cup flour to coat. This helps to prevent the apples from sinking into the cheesecake layer. Gently fold the coated apples into the cheesecake mixture.

Assemble the Bars: Pour the cheesecake mixture over the cooled crust, spreading it evenly. Bake in the preheated oven for 35-40 minutes, or until the center is set and slightly jiggly.

Cool and Chill: Once baked, remove from the oven and let the cheesecake bars cool to room temperature. Then refrigerate for at least 4 hours, ideally overnight, to set completely.

Add the Caramel Topping: Before serving, drizzle the top with caramel sauce and sprinkle with chopped pecans or walnuts if desired. Cut into bars and enjoy!
