Ingredients
  

4 medium sweet potatoes, peeled and cut into 1-inch cubes

1 cup brown sugar

1/2 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup mini marshmallows (optional)

Chopped pecans for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the cubed sweet potatoes with melted butter, brown sugar, cinnamon, nutmeg, and salt. Stir until the sweet potatoes are well-coated.

      Transfer the sweet potato mixture into a greased 9x13 inch baking dish, spreading them out evenly.

        Cover the baking dish with aluminum foil and bake for 30 minutes.

          After 30 minutes, remove the foil and stir the sweet potatoes gently. Drizzle the vanilla extract over them.

            Return to the oven, uncovered, and bake for an additional 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through.

              If desired, sprinkle mini marshmallows on top during the last 5 minutes of baking for a gooey finish.

                Once done, remove from the oven and let cool slightly. Garnish with chopped pecans if desired before serving.
