1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium red bell pepper, sliced

1 medium yellow bell pepper, sliced

1 cup corn kernels (fresh, frozen, or canned)

3 cloves garlic, minced

1 medium onion, diced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and black pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Optional: cooked rice or quinoa, for serving

Instructions
 

Marinate the Shrimp: In a bowl, toss the shrimp with Cajun seasoning, ensuring they are evenly coated. Let them marinate for about 15 minutes to absorb the flavors.

    Cook the Vegetables: In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and garlic, sautéing for about 2-3 minutes until the onion starts to become translucent.
