1 cup long-grain white rice

1 medium onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

2 cups chicken broth

1 tablespoon Cajun seasoning

1 teaspoon paprika

Salt and pepper, to taste

1 cup frozen peas

2 green onions, sliced (for garnish)

1 tablespoon olive oil

Prepare Ingredients: Gather all ingredients and slice the sausage, dice the onion, bell pepper, and mince the garlic.

    Sauté Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced Cajun sausage and sauté for about 3-4 minutes until browned.

      Add Veggies: To the skillet, add the diced onion, bell pepper, and minced garlic. Cook for an additional 3-4 minutes until the vegetables are softened.
