1 lb smoked sausage (Andouille or kielbasa), sliced

1 cup long-grain rice, rinsed

1 medium onion, chopped

1 green bell pepper, chopped

1 cup celery, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

2 cups chicken broth

2 tbsp Cajun seasoning

1 tsp dried thyme

Salt and pepper to taste

2 tbsp olive oil

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Sausage: Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for about 5 minutes until browned. Remove the sausage from the skillet and set aside.

    Cook Vegetables: In the same skillet, add onion, bell pepper, and celery. Sauté for about 4-5 minutes until the vegetables are soft. Add minced garlic and cook for an additional 1 minute until fragrant.

      Add Rice and Spices: Stir in the rinsed rice, Cajun seasoning, dried thyme, salt, and pepper. Mix well to coat the rice with the spices and oil.

        Combine Ingredients: Pour in the diced tomatoes (with juices) and chicken broth. Stir the mixture and bring it to a boil.

          Simmer: Once boiling, reduce the heat to low. Cover the skillet and let it simmer for about 15 minutes or until the rice is tender and has absorbed the liquid.

            Stir In Sausage and Peas: After 15 minutes, return the browned sausage to the skillet along with the frozen peas (if using). Stir to combine and let it heat through for another 5 minutes.

              Serve: Remove from heat and let it sit for a couple of minutes. Garnish with freshly chopped parsley before serving.
