Cajun Potato Soup

2 lbs Yukon Gold potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

1/2 lb smoked sausage or andouille sausage, sliced

4 cups chicken or vegetable broth

1 cup heavy cream

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for extra heat)

2 tablespoons olive oil

1 cup green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove from the pot and set aside.

    Cook the Aromatics: In the same pot, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add the Potatoes: Stir in the diced potatoes, Cajun seasoning, smoked paprika, black pepper, and cayenne pepper (if using). Mix well to coat the potatoes with the spices.

        Pour in Broth: Add the chicken or vegetable broth to the pot, bringing everything to a boil. Once boiling, reduce the heat to low and cover, allowing the soup to simmer for about 20-25 minutes, or until the potatoes are tender.

          Blend the Soup: Once the potatoes are soft, use an immersion blender to puree the soup to your desired consistency. For a chunkier soup, blend only half, or blend some in a blender and return to the pot.

            Finish with Cream and Sausage: Stir in the heavy cream and the cooked sausage. Let the soup simmer for an additional 5 minutes to heat through. Taste and adjust seasoning if necessary.

              Garnish and Serve: Ladle the soup into bowls and garnish with chopped green onions and fresh parsley for a pop of color and freshness.
