To achieve the perfect creamy texture in your grits, it's essential to follow a few key tips to prevent clumping. First, always use a whisk to stir the grits as they cook. This helps to break apart any lumps and ensures even cooking. Start by bringing your water or broth to a boil before slowly whisking in the grits. Once added, reduce the heat to low immediately to avoid the grits cooking too quickly and clumping together.

Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Juice of 1 lemon

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

For the Grits:

1 cup stone-ground grits

4 cups water or chicken stock

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons unsalted butter

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

Prepare the Grits: In a medium saucepan, bring 4 cups of water or chicken stock to a boil. Slowly add the stone-ground grits while whisking to avoid lumps. Reduce the heat to low and cook, stirring occasionally, for about 20-25 minutes, or until creamy. If using instant grits, follow package instructions.

Add Cream and Cheese: Once the grits are cooked, stir in the heavy cream, cheddar cheese, 2 tablespoons of butter, salt, and black pepper. Mix well until smooth and creamy. Set aside and keep warm.

Cook the Shrimp: In a large skillet over medium heat, melt the 4 tablespoons of butter. Add the minced garlic and cook for 1-2 minutes until fragrant but not browned.

Season the Shrimp: Add the shrimp to the skillet, and sprinkle with the Cajun seasoning, smoked paprika, salt, and black pepper. Cook for 3-4 minutes until the shrimp are pink and opaque, stirring frequently.

Finish with Lemon: Remove the skillet from heat and squeeze the lemon juice over the shrimp, tossing to combine. Taste and adjust seasoning if necessary.

Serve: Spoon a generous portion of the creamy grits onto each plate, top with the Cajun garlic butter shrimp, and garnish with sliced green onions and fresh parsley.

Enjoy: Dive into this rich and flavorful dish, savoring the delightful combination of spices and creamy textures.
