Ingredients

1 lb (450g) baby carrots (or regular carrots cut into sticks)

3 tablespoons unsalted butter

2 tablespoons honey

1 tablespoon brown sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon cinnamon (optional)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Carrots: If using regular carrots, peel and slice them into 1/4-inch thick sticks. If using baby carrots, rinse them under cold water and set aside.

Melt the Butter: In a large skillet over medium heat, melt the unsalted butter. Allow it to sizzle for about a minute until it becomes fragrant but doesn’t brown.

Sweeten the Mix: Stir in the honey and brown sugar, mixing well until fully combined and slightly bubbly.

Add the Carrots: Carefully add the carrots to the skillet. Sprinkle with salt, black pepper, and cinnamon (if using). Toss to coat the carrots thoroughly with the buttery honey mixture.

Cook the Carrots: Cover the skillet with a lid and cook for about 10-15 minutes, stirring occasionally. Cook until the carrots are tender but still slightly crunchy. Adjust the lid for steam as necessary.

Glaze & Serve: Once cooked to your desired tenderness, remove the lid and give the carrots a final toss to ensure they are evenly glazed. Cook for an additional 2-3 minutes uncovered to let excess liquid evaporate.

Garnish: Transfer the glazed carrots to a serving dish and sprinkle with freshly chopped parsley for a pop of color.

Enjoy: Serve warm as a perfect side dish to accompany your favorite main courses!
