Ingredients

2 lbs baby potatoes (Yukon Gold or red, halved)

5 tablespoons unsalted butter, melted

4 cloves garlic, minced

2 teaspoons fresh rosemary, finely chopped (or 1 teaspoon dried)

2 teaspoons fresh thyme, finely chopped (or 1 teaspoon dried)

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley for garnish (optional)

Zest of 1 lemon (optional, for brightness)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes with melted butter, minced garlic, chopped rosemary, thyme, paprika, salt, and pepper. Toss until all potatoes are well-coated.

Arrange on Baking Sheet: Spread the coated potatoes in a single layer on a large baking sheet. Be sure they're cut-side down for optimal browning.

Roast the Potatoes: Place the baking sheet in the preheated oven and roast for about 30-35 minutes, or until the potatoes are golden brown and crispy on the outside. Shake the pan halfway through to ensure even roasting.

Garnish and Serve: Once finished, remove from the oven, and if desired, sprinkle with lemon zest and fresh parsley for added brightness. Serve hot as a delicious side dish or appetizer.
