Ingredients

1 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup butterscotch chips

1 cup semi-sweet chocolate chunks

1/2 cup chopped pecans or walnuts (optional)

Sea salt flakes, for sprinkling

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together on medium speed until light and fluffy (about 2-3 minutes).

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract until well combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Be careful not to overmix.

Fold in Chocolates and Nuts: Gently fold in the butterscotch chips, chocolate chunks, and chopped nuts (if using) until evenly distributed in the dough.

Scoop the Dough: Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Sprinkle with Sea Salt: Lightly sprinkle sea salt flakes on top of each cookie dough ball to enhance the flavors.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are still soft and slightly underbaked.

Cool: Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely. This helps them set while keeping the centers gooey.

Enjoy: Serve warm for the ultimate gooey experience, or store in an airtight container for 3-5 days at room temperature.
