2 cups whole milk

1/2 cup packed brown sugar

1/4 cup granulated sugar

1/3 cup cornstarch

1/4 teaspoon salt

3 large egg yolks

4 tablespoons unsalted butter, cut into pieces

1 teaspoon vanilla extract

1 teaspoon butter extract (for extra flavor)

3 ripe bananas, sliced

1 package (about 11 ounces) of vanilla wafers

Whipped cream (for topping)

Fresh banana slices and butterscotch sauce (for garnish)

Instructions
 

Prepare the Pudding Base: In a medium-sized saucepan, whisk together the whole milk, brown sugar, granulated sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble (about 8-10 minutes).

    Temper the Egg Yolks: In a separate bowl, beat the egg yolks. Once the pudding mixture thickens, slowly ladle about 1 cup of the hot mixture into the egg yolks while whisking constantly. This process is called tempering and prevents the eggs from scrambling.

      Combine and Cook Further: Pour the tempered egg mixture back into the saucepan with the rest of the pudding. Continue to cook over medium heat, whisking for about 2 more minutes until it thickens even more. Remove from heat.

        Flavor the Pudding: Stir in the butter pieces, vanilla extract, and butter extract until the butter has melted and the mixture is smooth.

          Assemble the Dessert: In a trifle dish or a large bowl, layer half of the vanilla wafers on the bottom. Add half of the banana slices on top, then half of the butterscotch pudding. Repeat the layers with the remaining wafers, bananas, and pudding.

            Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to let the flavors meld together and the pudding set properly.
