Butternut Squash & Bacon Flatbread

1 large butternut squash, peeled and sliced into thin rounds

4 strips of thick-cut bacon, diced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon ground sage

1 teaspoon garlic powder

1 pre-made pizza dough or flatbread (store-bought or homemade)

1 cup shredded mozzarella cheese

½ cup crumbled goat cheese (optional but recommended)

Fresh arugula, for topping

Balsamic glaze, for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Butternut Squash: In a large bowl, toss the butternut squash rounds with olive oil, salt, pepper, ground sage, and garlic powder until well coated. Spread them out evenly on a baking sheet.

      Roast the Squash: Roast the butternut squash in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through for even roasting.

        Cook the Bacon: While the squash roasts, cook the diced bacon in a skillet over medium heat until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess grease.

          Prepare the Flatbread: On another baking sheet or a pizza stone, roll out the pizza dough or place the flatbread. If using pizza dough, stretch it out to your desired shape (rectangle or round).

            Assemble the Flatbread: Spread half of the mozzarella cheese evenly across the flatbread. Layer the roasted butternut squash and crispy bacon on top. Sprinkle the remaining mozzarella cheese over the top and add crumbles of goat cheese if using.

              Bake: Transfer the flatbread to the oven and bake for 10-15 minutes, or until the cheese is bubbly and the edges are golden brown.

                Finish and Serve: Once out of the oven, sprinkle fresh arugula over the top and drizzle with balsamic glaze for a flavorful touch. Let rest for a couple of minutes before slicing and serving.
