Ingredients

4 pounds of chicken parts (wings, thighs, drumsticks)

2 cups buttermilk

2 teaspoons hot sauce (optional, for a kick)

3 cups all-purpose flour

2 teaspoons paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (adjust to taste)

Vegetable oil (for frying)

Instructions

Marinate the Chicken:

    - In a large mixing bowl, combine the buttermilk and hot sauce (if using).

      - Add the chicken pieces, ensuring they are fully submerged in the buttermilk mixture.

        - Cover and refrigerate for at least 4 hours, or preferably overnight. This will tenderize the chicken and enhance flavor.

          Prepare the Dredging Mixture:

            - In a separate bowl, whisk together the flour, paprika, garlic powder, onion powder, oregano, thyme, salt, black pepper, and cayenne pepper.

              - Mix well until evenly combined.

                Heat the Oil:

                  - In a large cast-iron skillet or deep fryer, pour enough vegetable oil to fill about 1/3 of the pan. Heat the oil to 350°F (175°C). Use a deep-frying thermometer for accuracy.

                    Dredge the Chicken:

                      - Remove the chicken pieces from the buttermilk, allowing excess to drip off.

                        - Dredge each piece in the seasoned flour mixture, pressing lightly to adhere the flour. Shake off any excess flour and set aside on a wire rack.

                          Fry the Chicken:

                            - Once the oil is hot, carefully lower the chicken pieces into the oil, several pieces at a time, without overcrowding the pan.

                              - Fry for about 10-15 minutes, or until golden brown and fully cooked through (internal temperature should reach 165°F or 74°C).

                                - Turn the chicken occasionally for even cooking.

                                  Drain and Serve:

                                    - Once cooked, use tongs to transfer the fried chicken to a plate lined with paper towels to drain excess oil.

                                      - Let it rest for a few minutes before serving.

                                        Enjoy:

                                          - Serve your crispy buttermilk fried chicken with your favorite sides like coleslaw, cornbread, or mashed potatoes. Enjoy the deliciousness!
