Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk, at room temperature

3 large eggs

1 teaspoon vanilla extract

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

For the Buttercream Frosting:

1 cup unsalted butter, softened

4-5 cups powdered sugar, sifted

¼ cup heavy cream or milk

2 teaspoons vanilla extract

A pinch of salt

Optional: Food coloring for decoration

Instructions

For the Cake:

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined; do not overmix.

Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then turn them out onto wire racks to cool completely.

                  For the Buttercream Frosting:

Beat the Butter: In a large mixing bowl, beat the softened butter on medium speed until creamy.

Add Powdered Sugar: Gradually add the powdered sugar, one cup at a time, mixing on low speed until incorporated, then increase to medium speed until smooth.

Add Cream and Vanilla: Add the heavy cream (or milk), vanilla extract, and a pinch of salt. Beat for an additional 2-3 minutes until the frosting is fluffy and smooth.

Adjust Consistency: If the frosting is too thick, add more cream, a tablespoon at a time. If it’s too thin, gradually add more powdered sugar until you reach your desired consistency.

                            Assembling the Cake:

Layer the Cakes: Place one cake layer on a serving plate. Spread a generous amount of buttercream frosting on top.

Add Second Layer: Place the second layer of cake on top. Use the remaining frosting to cover the top and sides of the cake smoothly.

Decorate: If desired, use food coloring to tint some of the frosting and decorate the cake with piping or sprinkles.

Serve and Enjoy: Slice your Buttermilk Bliss Cake and enjoy with family and friends!
