1 lb ground chicken

1 cup buffalo sauce (adjust to heat preference)

1/2 cup diced onions

1/2 cup diced celery

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/4 cup blue cheese crumbles (optional)

12 slider rolls

2 tbsp olive oil

Green onions, sliced (for garnish)

Instructions
 

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onions and celery, cooking until they’re soft and translucent, about 5 minutes. Stir in the minced garlic, cooking for an additional minute until fragrant.

    Cook Chicken: Add the ground chicken to the skillet, breaking it up with a wooden spoon. Cook until fully browned and cooked through, about 6-7 minutes.

      Season and Add Sauce: Sprinkle the smoked paprika, onion powder, salt, and black pepper over the chicken mixture. Stir well to combine. Pour in the buffalo sauce, mixing until the chicken is well-coated. Let it simmer for about 5 minutes on low heat to meld the flavors.

        Prepare Slider Rolls: While the mixture simmers, preheat the oven to 350°F (175°C). Split the slider rolls in half and place them on a baking sheet, cut side up.

          Assemble Sliders: Once the chicken mixture has thickened slightly, spoon a generous amount onto the bottom half of each slider roll. If using, sprinkle blue cheese crumbles on top of the chicken.

            Broil Sliders: Place the top half of the rolls over the chicken mixture. No need to press down! Bake in the preheated oven for about 5-7 minutes, or until the tops are golden and slightly crispy.

              Garnish and Serve: Remove the sliders from the oven. Garnish with sliced green onions. Serve warm with extra buffalo sauce and napkins on hand, as these sliders can get messy!
