Ingredients

1 cup unsalted butter (2 sticks)

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

3 cups old-fashioned rolled oats

1 cup raisins or chocolate chips (optional)

2 cups powdered sugar

4 tablespoons milk

1 teaspoon vanilla extract (for icing)

Instructions

Brown the Butter: In a medium saucepan, melt the butter over medium heat. Continue cooking, swirling occasionally, until the butter turns a golden brown color and has a nutty aroma (about 5-8 minutes). Watch closely to prevent burning. Remove from heat and let cool slightly.

Mix the Dough: In a large bowl, combine the brown butter, brown sugar, and granulated sugar. Mix until well combined. Add the eggs and vanilla extract, and beat until smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Add Oats and Mix-ins: Fold in the rolled oats and either raisins or chocolate chips, if desired.

Chill the Dough: Cover the bowl with plastic wrap and chill the cookie dough in the refrigerator for at least 30 minutes (this will help the cookies maintain their shape while baking).

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Bake the Cookies: Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are golden, but the centers are still soft. Let them cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.

Prepare the Icing: In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the milk for your desired consistency (more for a thinner icing, less for a thicker icing).

Ice the Cookies: Once the cookies are completely cooled, drizzle or spread the icing over the tops of the cookies. Let the icing set for a few minutes before serving.

Enjoy! Store any leftover cookies in an airtight container at room temperature for up to a week.
