4 bone-in pork chops (1 inch thick)

8 oz Boursin cheese (garlic and herb flavor)

1 cup fresh spinach, chopped

1 cup mushrooms, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

½ cup chicken broth

1 tablespoon balsamic vinegar

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Preheat your oven to 375°F (190°C). Using a sharp knife, create a pocket in each pork chop by slicing horizontally along the side, being careful not to cut all the way through.

    Cook the Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped mushrooms and spinach, cooking until the mushrooms are tender and the spinach has wilted, about 4-5 minutes. Season with thyme, salt, and pepper. Remove from heat and let cool slightly.

      Stuff the Chops: Once the vegetable mixture has cooled, combine it with the Boursin cheese in a bowl. Mix well. Generously stuff each pork chop pocket with the Boursin and vegetable mixture, securing with toothpicks if necessary.

        Sear the Pork Chops: In the same skillet, increase the heat to medium-high. Sear each stuffed pork chop for about 3-4 minutes per side, or until they are golden brown.

          Bake to Finish Cooking: Transfer the seared pork chops to a baking dish. In the same skillet, add the chicken broth and balsamic vinegar, scraping the bottom to deglaze. Pour this mixture over the pork chops. Cover the dish with foil and bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 145°F (63°C).
