1 lb (450g) beef sirloin, thinly sliced

2 cups fresh spinach leaves

1 cup mixed salad greens (arugula, romaine, etc.)

1 cup blueberries, fresh or frozen (thawed)

1/2 cup crumbled feta cheese

1/4 cup red onion, thinly sliced

1/4 cup walnuts, roughly chopped

2 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

Cook the Beef: Season the thinly sliced beef sirloin with salt and pepper. In a skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the beef and cook for 2-3 minutes until browned and cooked to your liking. Remove from heat and let it rest for a few minutes.

    Make the Dressing: In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, and the remaining tablespoon of olive oil. Season with salt and pepper to taste.

      Prepare the Salad Base: In a large mixing bowl, combine the spinach leaves and mixed salad greens. Toss them gently to mix well.
