Ingredients

For the Crust:

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/4 teaspoon salt

For the Filling:

1 cup fresh blackberries (or frozen, thawed)

1/3 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

2 large eggs

For the Topping:

1/2 cup shelled pistachios, coarsely chopped

1/4 teaspoon ground cinnamon

1/4 cup granulated sugar

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving a slight overhang for easy removal later.

Make the Crust: In a medium bowl, cream together the softened butter and 1/4 cup of sugar until light and fluffy. Gradually mix in the flour and salt until the dough forms a ball. Press the dough evenly into the bottom of the prepared pan. Bake for about 15 minutes, or until lightly golden. Remove from the oven and let cool slightly.

Prepare the Filling: In a medium bowl, mash the blackberries gently with a fork. Stir in the sugar, cornstarch, lemon juice, vanilla extract, and the eggs until well combined. Pour the blackberry mixture over the cooled crust, spreading it evenly.

Make the Topping: In a small bowl, combine the chopped pistachios, ground cinnamon, and 1/4 cup of sugar. Sprinkle this mixture evenly over the blackberry filling.

Bake the Bars: Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and the topping is lightly golden. Keep an eye on it to prevent over-baking.

Cool and Slice: Allow the bars to cool in the pan on a wire rack for at least 1 hour. Once cool, lift the bars out using the parchment paper overhang, and slice into squares or rectangles.

Serve: Enjoy these delightful bars warm or chilled. They are perfect as a dessert or snack, and can be garnished with a dollop of whipped cream or a scoop of vanilla ice cream!
