2 cups heavy whipping cream, chilled

1 cup powdered sugar

1 teaspoon vanilla extract

1 jar (24 oz) cherry pie filling

1 package (15 oz) chocolate wafer cookies

1 cup chocolate shavings (for garnish)

Fresh cherries (for garnish, optional)

A pinch of salt

Prepare the Whipped Cream: In a large mixing bowl, using an electric mixer, whip the heavy cream until it begins to thicken. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Continue whipping until soft peaks form.

    Layer the Cake: In a 9x13-inch baking dish, start by spreading a thin layer of whipped cream on the bottom. Then, place a single layer of chocolate wafer cookies over the cream, slightly overlapping them.

      Add Cherry Filling: Spoon half of the cherry pie filling over the cookies, distributing it evenly.

        Add More Cream: Spread half of the remaining whipped cream over the cherry filling.

          Repeat Layers: Repeat the layering process: add another layer of chocolate wafer cookies, the remaining cherry filling, and all but about 1 cup of the whipped cream. Top this final layer with a last layer of chocolate wafer cookies.

            Chill the Cake: Spread the remaining whipped cream on top of the final layer of cookies. Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, to allow the flavors to meld and the cookies to soften.

              Garnish and Serve: Before serving, add chocolate shavings on top of the whipped cream. If using, garnish with fresh cherries for an added touch. Cut into squares and enjoy!
