6 large eggs

1/2 cup cottage cheese

1/2 cup shredded cheese (cheddar, gouda, or your favorite blend)

1/4 cup diced red bell pepper

1/4 cup diced cooked bacon or sausage (optional)

1/4 cup spinach (fresh or frozen, chopped)

Salt and pepper to taste

Cooking spray or olive oil for greasing

Instructions
 

Preheat your oven to 325°F (160°C).

    In a blender, combine the eggs and cottage cheese. Blend until smooth and creamy.

      Add in the shredded cheese, diced red bell pepper, spinach, and bacon or sausage if using. Season with salt and pepper. Pulse gently until just combined.

        Grease a muffin tin (preferably silicone for easy release) with cooking spray or olive oil.

          Pour the egg mixture into each muffin cup, filling them about 3/4 full.

            Bake in the preheated oven for 25-30 minutes, or until the egg bites are set and slightly puffed.

              Remove from the oven and allow to cool for 5 minutes before gently popping them out of the muffin tin.

                Serve warm or refrigerate for up to a week. Reheat in the microwave for a quick breakfast.
