For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

½ teaspoon vanilla extract

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

½ cup fresh strawberries, pureed (plus extra for topping)

For the strawberry topping:

1 cup fresh strawberries, sliced

2 tablespoons sugar

1 tablespoon lemon juice

1 tablespoon cornstarch (optional for thickening)

Prepare the crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and vanilla extract. Mix until well combined. Press the mixture firmly into the bottom of a 9x9 inch baking dish. Bake for 10 minutes until golden. Remove from the oven and let cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and sugar using an electric mixer until smooth and creamy, about 2 minutes. Add the vanilla extract and mix well.

      Incorporate eggs: Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing. Then add the sour cream and pureed strawberries, mixing until completely smooth.

        Bake the cheesecake: Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Bake in the preheated oven for 35-40 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for an hour.
