2 cups all-purpose flour

1/2 tsp salt

1/4 cup granulated sugar

1/4 cup unsalted butter, cold and cubed

1/2 cup sour cream

3 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 cup brown sugar

1 tbsp lemon juice

1 egg (for egg wash)

1 tbsp milk (for egg wash)

Optional: Sugar for sprinkling on top

Instructions
 

Make the Dough:

    - In a large bowl, combine the flour, salt, and granulated sugar. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

      - Stir in the sour cream until the dough begins to come together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

        Prepare the Apple Filling:

          - In a medium bowl, combine the diced apples, cinnamon, nutmeg, brown sugar, and lemon juice. Toss well to coat the apples evenly and let the mixture sit while you roll out the dough.

            Roll Out the Dough:

              - On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Using a round cutter (about 4-5 inches in diameter), cut out circles of dough.

                Assemble the Hand Pies:

                  - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

                    - Place a heaping tablespoon of the apple filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges and seal them tightly.

                      - Place the hand pies on the prepared baking sheet.

                        Egg Wash and Bake:
