1 ½ cups all-purpose flour

1 cup fresh blueberries

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup granulated sugar

Zest of 1 large lemon

½ cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon pure vanilla extract

½ cup buttermilk (or milk with 1 tablespoon lemon juice added)

Juice of 1 large lemon

Optional: powdered sugar for dusting

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.

    Combine Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest. Set aside.

      Mix Wet Ingredients: In a separate large bowl, combine the melted butter and sugar, mixing until well incorporated. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract, buttermilk, and lemon juice until just combined.
