2 cups cooked chicken breast, shredded or diced

1 cup celery, diced

1/2 cup red grapes, halved

1/2 cup walnuts, chopped

1/2 cup Greek yogurt (or mayonnaise for a richer taste)

1 tablespoon Dijon mustard

1 tablespoon honey

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

4 cups mixed greens (spinach, arugula, baby kale)

Optional: 1/4 cup crumbled feta cheese

Instructions
 

Prepare the Dressing: In a medium mixing bowl, combine the Greek yogurt, Dijon mustard, honey, lemon juice, garlic powder, salt, and pepper. Whisk until smooth and creamy.
