For the Dumplings:

1 cup all-purpose flour

2 tbsp cornstarch

1/2 tsp baking powder

1/4 tsp salt

1/4 cup water (adjust as needed)

1 tbsp sesame oil

For the Filling:

1 cup cooked and shredded chicken (or tofu for a vegetarian option)

1/4 cup finely chopped green onions

1/4 cup grated carrot

1 tbsp curry powder

1 tsp ginger paste

Salt and pepper to taste

For the Soup:

4 cups chicken or vegetable broth

1 can (14 oz) coconut milk

2 tbsp red curry paste

1 tbsp soy sauce

1 tsp turmeric powder

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp lime juice

Fresh cilantro and lime wedges, for garnish

Instructions
 

Make the Dumpling Dough:

    In a mixing bowl, combine the flour, cornstarch, baking powder, and salt. Gradually add water and mix until a smooth dough forms. Add sesame oil, knead for a minute, then cover with a damp cloth and let it rest for 30 minutes.

      Prepare the Filling:

        In a bowl, combine shredded chicken (or tofu), green onions, grated carrot, curry powder, ginger paste, salt, and pepper. Mix well and set aside.

          Shape the Dumplings:

            Divide the dough into small balls (around 1-inch diameter). Flatten each ball into a disc, place about a teaspoon of the filling in the center, and fold the dough over to create a pouch, sealing the edges securely. Repeat until all dough and filling are used.

              Cook the Dumplings:

                In a pot of boiling water, gently drop the dumplings and cook for about 5-6 minutes or until they float to the surface. Remove and set aside.

                  Prepare the Soup:

                    In a large pot, heat a little oil over medium heat and sauté the onions and garlic until fragrant. Add the red curry paste and turmeric powder, cooking for another minute.

                      Add Broth and Coconut Milk:

                        Pour in the chicken or vegetable broth and coconut milk. Bring to a simmer and add soy sauce and lime juice. Adjust seasoning as needed.
