Ingredients

3 medium zucchinis

1 cup all-purpose flour (or gluten-free flour for a gluten-free option)

2 large eggs

1 cup breadcrumbs (use panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prep the Zucchini: Wash and dry the zucchinis. Cut them into fry-sized sticks about 1/4 inch thick.

Set Up Breading Stations: In three separate bowls, prepare your breading stations:

        - In the first bowl, place the flour mixed with salt, pepper, garlic powder, onion powder, and paprika.

          - In the second bowl, beat the eggs until smooth.

            - In the third bowl, combine the breadcrumbs and grated Parmesan cheese.

Bread the Zucchini: Dredge each zucchini stick first in the flour mixture, shaking off the excess. Next, dip into the beaten eggs, allowing the excess egg to drip off. Finally, coat the zucchini in the breadcrumb mixture, pressing gently to ensure the crumbs adhere.

Arrange on Baking Sheet: Place the breaded zucchini fries in a single layer on the prepared baking sheet. Make sure they are not crowded to ensure they get crispy.

Add the Final Touch: Lightly spray or drizzle olive oil over the coated zucchini fries to help them crisp up while baking.

Bake: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.

Serve and Enjoy: Remove from the oven and let them cool slightly. Serve hot with your choice of dipping sauces such as marinara, ranch dressing, or garlic aioli!
