Beef Tacos with Cherry Slaw

For the Beef:

1 pound ground beef (80/20 blend for optimal juiciness)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon Worcestershire sauce

1 tablespoon lime juice

For the Cherry Slaw:

2 cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 cup fresh cherries, pitted and roughly chopped

¼ cup fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey

½ teaspoon salt

¼ teaspoon black pepper

For Serving:

8 small corn tortillas

Lime wedges

Additional cilantro for garnish

Prepare the Cherry Slaw:

    In a large bowl, combine the green cabbage, red cabbage, chopped cherries, and cilantro. In a separate small bowl, whisk together the apple cider vinegar, honey, salt, and black pepper. Pour the dressing over the cabbage mixture and toss well to combine. Let it sit while you prepare the beef to allow the flavors to meld together.

      Cook the Beef:

        In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
