Beef Enchilada Casserole

1 pound ground beef

1 small onion, chopped

2 cloves garlic, minced

1 can (10 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) enchilada sauce

8 corn tortillas

2 cups shredded cheddar cheese

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, sauté the chopped onion until translucent (about 4-5 minutes). Add the minced garlic and cook for another minute until fragrant. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain excess fat if necessary.

      Add Sauces and Beans: Stir in the diced tomatoes with green chilies, black beans, enchilada sauce, cumin, chili powder, salt, and pepper. Let it simmer for about 5-7 minutes to blend the flavors together.

        Assemble the Casserole: In a 9x13 inch casserole dish, spread a thin layer of the beef mixture on the bottom. Place four corn tortillas on top. Spoon half of the remaining beef mixture over the tortillas, followed by a layer of cheese (1 cup). Repeat the layers, finishing with the last four tortillas and remaining beef mixture on top. Sprinkle the remaining cheese evenly over the top.

          Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

            Serve: Allow the casserole to cool slightly before cutting into squares. Garnish with fresh cilantro and serve with a dollop of sour cream, if desired.
